Onomatopée '19

Côme Isambert is a small wine company that started in Saumur in 2013. After 12 years in the wine sector and in the organic field, Côme decided to launch its own winery and to produce high quality wines, with about 6,000 bottles a year. His philosophy is to produce wines and cider that reflect the diversity and richness of the Loire Valley's terroirs and to enhance, through different vintages, the complementarity of grape varieties such as Chenin blanc, Cabernet franc, Grolleau noir, Grolleau gris, Gamay, while making it a point of honour to respect the natural winemaking process and the diversity of natural environments.

The cellar is set up underneath a Chateau in Saumur, at the entrance of an old mushroom factory in caves built into the rock. He gets to use the space as the owner of the Chateau doesn’t want people breaking in and using the space for underground raves. It all sounds a bit DIY and it is, but what marks Côme out is his talent - every year he comes up with distinctive and delicious wines from whatever fruit comes his way.

Description: The Onomatopée 2019 is a blend of 45% Grolleau Gris, 40% Gamay and 15% Grolleau Noir, with semi carbonic maceration for three weeks after harvest. The outcome is a fresh and funky juice bottled with some natural fizz. Lots of wild berries and flowers, some earthy notes, medium acidity and a savoury finish with juicy tannins. This wine is fermented spontaneously
